Mmm, this appetizer was SO delicious! I loved the silky texture of the foie gras mousse combined with the hard bruleed crust. I thought the toast points were a little tacky though (and definitely not enough of them for the amount of foie gras).

This soup was very flavorful, but surprisingly light compared to something like a pozole. I didn’t know what to expect and I was pleasantly surprised. The flavors were subtle but well developed. I was tickled by the dried whole pepper plopped in the middle.
