I wasn’t expecting this dish to be so wet and soupy, especially when they have shaved piave on top. I was really looking for something more thick and hearty. I liked the flavors, but somehow the soupy texture really threw me off.

I love pickled beets and I liked the contrast of the two beet varieties used. The chevre was a predictable choice, but it still tasted great with the beets. Mmm…
