This was a very clean tasting dish. The halibut was cooked nicely and the other ingredients were lovely. I don’t know that I was amazed by this dish though. Nothing about it was particularly exciting. That said, it was still tasty.

I have had plenty of that sort of dishes at fine dining places, nice but unamazing. Which is why I fell out of love with fine dining
Yeah, I don’t do fine dining as often these days.
I am a “texture” eater and not sure I would eat that with the bubbles (not that I would eat it anyway as I don’t like seafood) but it is a very unique presentation.
I don’t even notice the foam anymore unless they have a prominent flavor.
I’m still not a big fan of foams, but the fish looks good!
Foam is over. The fish was good. That’s it. When I spend that much for a dish I wanna get excited or at least fulfilled somehow.
