Roasted squash, roasted beet, herbed yogurt. $12
Zare at Fly Trap, San Francisco CA
I have always assumed that hummus has to be made of chickpeas, but apparently I’ve been misguided (or perhaps this restaurant has been liberal in its use of the term). In any case, these spreads were very tasty and so different in their flavors and textures. The pea shoot garnish was also a nice touch.

Served with crispy lavash.
I have a friend who makes a dip exactly like hummus but with peas. It’s fabulous!!
I think that restaurant maybe taking liberties π
That’s what I thought.
I no food expert, but I’ve had enough hummus in my life to know the difference. π
You’re on the money my friend π
The term “Hummus” means chickpeas in Arabic. A lot of people are making new variations of the dip but it’s not really “hummus” because it has to be pure chickpeas in order to be hummus.
Thanks for the clarification! π
